Tomato Salsa

• 1 pound fresh tomatoes, cored and chopped
• 1⁄2 onion, chopped
• 1 tsp. olive oil
• 2-3 mild green chilies, diced
• 1 tsp. chili powder, or to taste
• 1⁄2 tsp. salt
• Squeeze of fresh lime
• Fresh coriander or cilantro, snipped

Heat olive oil in 2-quart Sauté Pan over low heat. Add chopped
onion and green chilies; sauté for 5 minutes. Add chopped tomatoes,
chili powder, salt, and lime juice. Simmer until tomatoes are
soft, approximately 5 minutes. Garnish with snipped coriander or
cilantro. Serves 8.
